Zuppa Toscana Soup {Olive Garden Copycat Recipe}

 6-8 servings ( I always double the batch for my family of 7, so we are left with left overs)


  • 1 lb ground Italian sausage (mild)
  • 1 1/2 teaspoon crushed red peppers
  • 1 large white onion diced
  • 4 tbsp bacon, chopped
  • 1 tsp garlic puree
  • 10 cups of water
  • 5 cubes chicken bouillon
  • 1 cup heavy cream
  • 3 large russet potatoes 
  • bunch of kale


  1. 1: Saute Italian sausage and crushed red popper. Drain excess fat and store in fridge and continue....
  2. 2: Saute bacon, onions and garlic over low heat for about 10 minutes, until onions are soft.
  3. 3: Add chicken bouillon and the 10 cups of water to large pot.
  4. 4: Slice potato's or dice however you like em, add them to the pot and cook for about 25 minutes until potatoes are soft.

    5: Add heavy cream and sausage, stir well and cook until thoroughly heated.

    6: Add kale, stir once more, remove from heat and serve!!
