Zuppa Toscana Soup (Olive Garden Recipe)
Zuppa Toscana Soup {Olive Garden Copycat Recipe}
6-8 servings ( I always double the batch for my family of 7, so we are left with left overs)
Ingredients
- 1 lb ground Italian sausage (mild)
- 1 1/2 teaspoon crushed red peppers
- 1 large white onion diced
- 4 tbsp bacon, chopped
- 1 tsp garlic puree
- 10 cups of water
- 5 cubes chicken bouillon
- 1 cup heavy cream
- 3 large russet potatoes
- bunch of kale
Instructions
- 1: Saute Italian sausage and crushed red popper. Drain excess fat and store in fridge and continue....
- 2: Saute bacon, onions and garlic over low heat for about 10 minutes, until onions are soft.
- 3: Add chicken bouillon and the 10 cups of water to large pot.
- 4: Slice potato's or dice however you like em, add them to the pot and cook for about 25 minutes until potatoes are soft.5: Add heavy cream and sausage, stir well and cook until thoroughly heated.6: Add kale, stir once more, remove from heat and serve!!
